Beginners • Display not right in headless mode

I have a new RPi4b I am trying to use in headless mode, I first set it up using a hdmi display. The screen resolution of the display is 1920x1080. When I use RealVNC viewer I am getting strange results the size of the screen and the windows within the screen vary when I disconnect the hdmi screen. I found the option in raspberry pi configuration menu for Headless Resolution under the Display option. I changed this to a few different options to see how it works. The problem is right now the drop down menu only extends a few lines down and is difficult to operate. Also most windows that open open in a very small size located at the upper left of the screen and all the drop down menus behave as if the window is still the small size and only drop a few lines even if I expand the window. Can you please help what setting do I need to make it display right I just have the standard new installation of Bullseye. Thanks.
