HATs and other add-ons • 2 hats, 5 NVME's, all visible to the Pi but without video when booting from NVMe

I have both a Pimeroni Hat, and when that didn't work, I also bought a GeeekPi metal case/cooler/NVMe hat/Power supply combo, just to confirm if it was

None of my NVMe's will boot on either of them, but I could "see" them in Raspian and used rpi-imager on the the Pi(s) themselves to copy the image to each NVMe (and then read a PDF off the NVMe), so that I'm reasonably confident it's not an interface issue.

Also, I've updated the bootloader via raspi-config and initially set up the Pi to boot from NVMe.

I have five NVMe's that I've tried without success:
Realtek RTL9210B-CG
Kingston NV1 SNVS/200G 2TB
Kingston NV2 SNV2S/250G 250GB
Fikwot VN501 PRO PCIe Gen3x4 256GB
Samsung PM9B1 256GB

I initially tried three other drives that turned out to be SATA, so I've learned that lesson the hard way. The above 5 drives are single-key-slot drives and are not listed in any way as being SATA drives.

The GeeekPi board has a NVMe activity light. That seems to be indicating that the PI is actually trying to boot as it runs on-and-off for several minutes and will occasionally flash if you just let the Pi run, which I assume is a log file being updated or some such thing, but from the moment of power-on, there is no display whatsoever. When I go to press and hold the power button to shut it down, the NVMe activity light immediately reacts which again leads me to believe the Pi is actually running, but headless.

So either I'm incredibly unlucky, or I'm doing something wrong. So, some questions;

1) Has anyone used any of the above NVMe's successfully?
2) Does anyone have a link on Amazon.ca (Canada) to an NVMe that's known to work? Most of the links I find point to the UK and that would mean increased shipping fees, import duties and at least a week in transit.
3) Is there any equivalent to F8 on a PC where you can select your boot options during start-up so I can select the SD card when a boot from NVMe fails?
4) Is there a way to force a display in case the PI just thinks it's headless?
5) Is there a way to connect to the Pi remotely to verify my theory that it's actually running? Keep in mind that without a display I have no idea what address it's using.

I had no idea the Pi would turn out to be so finicky.
