Raspberry Pi OS • Second monitor when the first is virtual….?

I’m running a Pi4 headless and running a custom program to control model railways

Currently I access the Pi through VNC when I need to

But, it would be really cool if I could add a second monitor (even though I really don’t have a first one) and have it display ONE of the windows that is always there when the Pi starts

Is this possible??
